Authenticity & Provenance

How we prove every cut is real Japanese Wagyu

There is a lot of fake wagyu in the UK. Cross-bred beef sold as Japanese. Lower grades passed off as A5. Here is exactly how we prove ours is the real thing.

The farm

Every cut comes from Tajimaya, a certified farm in Hyogo Prefecture — the same region as Kobe beef. We buy direct. No middle brokers.

The bloodline

Tajima cattle. The exact same genetic bloodline as Kobe beef. Kobe is simply Tajima cattle raised to a specific standard in a specific area. Our beef is the same genetics — the heritage you are paying for.

The grade

A4 and A5 only. These are the top two of Japan's 15 grades. A5 is the highest — maximum marbling (BMS 8 to 12), maximum yield (A). We never stock anything lower.

The certificate

Every shipment arrives with a JMGA (Japan Meat Grading Association) certificate showing the individual cow's 10-digit identification number, farm name, grade and marbling score. You can trace any cut back to the animal it came from. Ask us for the certificate photo on your order.

The cold chain

Flash frozen at -40°C in Japan within hours of butchery. Shipped sea-freight in temperature-controlled containers to our UK cold store. Delivered next-day in insulated packaging with dry ice. Never above -18°C from farm to your door.
